Make a roux w/ the sausage drippings and flour first. Then add the milk...that's what I do and it turns out great.

and btw Griff - eating pork isn't cruelty. So enjoy your biscuits and Yves, but spare us the anti-meat cruelty spin.

nmpkm,

Wishbone on Lincoln and School has Biscuits & Gravy, and I hear it's pretty dang good, though they only serve it until 11. For other restaurants that use quality ingredients there's also Schubas' Harmony Grill and Heartland Cafe, which has Heartland wheat biscuits with grits and either veggie sausage gravy or turkey sausage gravy. Chicago Diner also a veggie version.

This looks like a good recipe, but if I need my fix NOW, can anyone recommend a good diner for biscuits and gravy? The Hollywood Grill on North and Ashland is pretty nasty...

You can also just substitute Lightlife or Yves or Morningstar crumbles for real sausage. Cruelty-free, tastes almost like the real thing, cuts cooking time (you don't have to brown the crumbles or drain grease) and since it's a major "health-conscious concession," you could even stick with good ol' buttermilk. I would recommend Yves for Biscuits & Gravy. Available anywhere, from Whole Foods to Jewel.
