We wanted to say in the story and video that this adventure was inspired by Cathy2&apos;s LTH raccoon venture at Moto but it got trimmed for space sadly. The new video that&apos;s up at http://www.chicagotribune.com/entertainment/dining/chi-racoon_tasting_18jan18,1,2192992.story?coll=chi_mezz

has the chefs talking about the dish and me enjoying it. 

We couldnt say in a family newspaper that the chefs put elements on the plate meant to represent the raccoon&apos;s brain, intestines and the eventual maggots. But that&apos;s what they were supposed to be. You read it here first.
