You almost right on this Mikey T. Heck why would Chicagoist even waste time on some joker who says
the best sauce he has tasted is really rich, nice salt and sweet balance. Maybe there’s some chipotle in there." Well I guess it is Chicagoist!
Sounds closer to BBQ Sauce. Honestly Buffalo wings are an East coast thing like Blue crabs spiced in Old Bay in a bucket. And like most things the Midwest tries to copy, they ruin it. Heck look what they did to Sushi Samba from the Village in the NY! They opened one here next to a Hooters on one of the most suburban traveled streets in Chicago! Shame shame shame!

Any time you have a wing that has chipotle sauce, teriyaki, sweet and sour, whatever, it's not really a buffalo wing. buffalo wing is buffalo sauce. you shouldn't stray too far from that basic idea. sure BW3s wing tastes different than Yak-Zies (where was that on the list) but they're basically the same concept. when judging wings, shouldn't you judge the actual meat?
