Drinking wine can be an experience to savor and that experience is heightened when paired with some great cheeses. BIN 36 offers a nice atmosphere to do both these things. Chicagoist dined at the downtown location and not only enjoyed wine and cheese, but indulged in some of Executive Chef John Caputo’s cooking.
A glass of the Gruet NV Brut (BIN 1) started the evening with sparkling apple and citrus notes. BIN 36 not only offers individual cheeses but also offers eight different cheese flights. The BIN 36 Cheese Flight included: Fresh Chevre, Brigante Pepperoncini, Papillon, Grayson, Stilton and a Super Aged Gouda. These goat, sheep and cow’s milk cheeses provided an excellent sampling of the range of flavors available to cheese lovers and the inevitable variety of wine pairings to perfect.
The menu simplifies these wine pairings by recommending a wine with each selection. The Red Thai Curry Scallops were cooked perfectly and contained the exact amount of spice to please, but not overwhelm, the palate.
Overall, BIN 36 provides an excellent place for both novices and aficionados of wine and cheese. The menu is well designed to guide tasters by offering both wine and cheese flights and possible wine pairings to accentuate the flavor of a variety of dishes.

I just happened to meet a friend there who was in from out of town and we had drinks and a surprisingly nice dinner. Big place though and a convention in town led to really poor service. But they were polite about how long everything took.
I can't drink too much wine, it makes my urine smell funny.
I love this place. Once, when I went there, they accidentally spilled an entire flight of red wine on my friend and I. However, their response to the mistake was so professional and so perfect, that it almost made she and I want to go back there more often. Honestly, I've never been to a restaurant where an honest mistake, albeit a hugely embarrassing one, was handled with such grace.
I prefer the Bin Cafe location on Milwaukee, if only because the atmosphere is a bit more intimate and less upscale. Same great wine and food, totally different vibe.
