I'm eagerly anticipating my first meal at C-House, as I'm familiar with Mr. Siegel-Gardner's impressive skills and creative culinary curatorial decisions, having enjoyed his offerings at both Aquavit and Alto in NYC. Chicago summer sausage to garnish a morning Berber-spiced Bloody Mary?!? Bloody brilliant! Hand-made, fresh lavendar-lemon truffles to top off a challenging meal? Delightfully elegant! Sounds like Chef Seth and his crew--under Samuelsson's experienced gaze--are having fun with excellent ingredients, and to me that's the secret of fine dining in the 21st century (and always)--being surprised and delighted by the creativity of the chef, and his or her sensitive understanding of and handling of the raw material...C-ongratulations to C-hicago for enC-ouraging C-House!
