I had the absolute joy of meeting the Wine Cellar Sorbet folks at the Show. Not only are their sorbets fab, but the company's backstory is neat too. Mmm, now I must rush home for a pint.

@ Jillian... (AKA "Phillyist Prime"): Give'em time to expand. If they're available in Kentucky, Missouri and Kansas, they'll make PA real soon

Sounds amazing. Too bad we'll never be able to get it in Pennsylvania.

Very. I remember the chardonnay being particularly good. I don't have tasting notes in front of me, but I think Zablocki sources an un-oaked chardonnay for production. Having an oaked chardonnay sorbet would be a bit much.

mich: alcohol does make stuff melt faster, at higher percentages. With wine, we're talking about anywhere between 10-14 percent here.

Zablocki done his homework and what he's probably doing is using a lot of sugar in the mix, since alcohol doesn't freeze.

He's doing something right. These are some of the smoothest sorbets I've ever tasted. Moreover, Zablocki is capturing the flavor of the grape varietals perfectly.

Doesnt alcohol make stuff melt faster? I know when I used to put booze in my slurpees in high school, they always melted faster.
