Keeping a day job in the northern suburbs has re-acquainted us with many of the charms of growing up on the North and Northwest sides. That includes exploring the "border" suburbs when we want to get our nosh on. A co-worker who keeps asking us for restaurant advice (but never heeds it) offered to make a run to a long-forgotten hot dog stand a few weeks back. He brought us back an Italian beef sandwich from Herm's Hot Dog Palace in Skokie (3406 Dempster St., 847-673-9757). As a teenager, we used to bike or take the Skokie Swift to visit "Big Herm's" and grab this delicious sammich.
One major difference we've found between Italian beefs on the North and South sides is that South side joints drown the sandwiches in au jus to the point that you have this doughy mess intertwined with perfectly seasoned beef slices. Not Herm's; we ordered our beef "sweet, hot and dipped." When it got to us it was still firm enough to hold, while still retaining the "gravy" in the bread.
Yeah, this is a hell of an example of a good Italian Beef.

Yeah, not a big fan of the drowned sandwich. That said, I haven't had a good italian beef in a dog's age. Must. Have. Beef.
one good thing about Rosati's in the burbs (since i don't really care for their pizza) is their Italian beef. that thing's so drenched i have to eat the bread with a fork. mmm, i love it.
Man, that looks like something pulled out of an old women with some green peppers on it
That was really gross, Spook.
And sexist too!
LOL
Yeah, I just can't do the dipped because of the soggy bread. Love an Italian beef though.
Mmmmm, delicious Herm's Palace! I used to eat lunch there quite often.
I grew up on Novis in Berwyn...those things are typically dripping wet. Theres nothing worse than dry bread on an italian beef.
Oh, and I have to throw this out there but I just had Mr Beef on Orleans for the first time about a month ago. It was flat out no question the worst beef sandwich I have ever had in my entire life. Even the fries were atrocious and WAY oversalted. Figures Leno would like that place..
