Food Pr0n: L2O with Chef Laurent Gras

As we noted in yesterday's entry, Chef Laurent Gras allowed us into L2O's kitchen to take pictures of his beautiful creations. Apologies that all do not have descriptions; food flies out of the kitchen more quickly than I can snap it. Also, see some of the other pictures from the shoot. Enjoy.

This 'crystal ice lettuce' has been tantalizing me since yesterday!!

What is it exactly...how is it made? It's making my mouth water and I want to consume it!!!!!

Hi, Ingrid!

You've been wondering the same thing I've been wondering. I've been googling "crystal ice lettuce" "Emerald Crystal lettuce" and variations thereof for the last hour. Mainly, I've searched images because I want to see other pictures of the green. I've seen it mentioned a few places as Emerald Crystal Ice Lettuce or Emerald Crystal Lettuce but I'll be darned if I can find a picture of it.

I saw the making of this plate very briefly and it mainly consisted of watching them dot the leaves with the meyer lemon. It does look like there is a dressing on it but I hate that don't know more about it (the lettuce variety)! If you find anything, will you let me know? I will do likewise! :)

The closest thing I could find was "Miner's Lettuce".

Ingrid: Chef Gras' techniques will be one of the aspects I'll be discussing with him when we run our interview with him on Friday.

DROOO - It was gorgeous. I probably took 10 pictures of each salmon dish. Jacy Wojcik ate there on Saturday night and said it was fantastic.
