Ingrid: We're in luck! Alex, from L2O, who is seen in yesterday's entry on L2O's kitchen prep dotting the crystal ice lettuce, has kindly offered to e-mail me with some information on the green. I will be sure to comment with his information as well as e-mail you personally. :)

DROOO - It was gorgeous. I probably took 10 pictures of each salmon dish. Jacy Wojcik ate there on Saturday night and said it was fantastic.

Jacy - awww, thanks!

Ingrid: Chef Gras' techniques will be one of the aspects I'll be discussing with him when we run our interview with him on Friday.

His blog is also an entertaining read and gives readers a first-hand look as to how his mind works when he creates his menu items. You might be able to find info on the lettuce and meyer lemon dish there. The URL is http://l2oblog.typepad.com

We need to get Martha Stewart on speed dial!!!

The closest thing I could find was "Miner's Lettuce".

Hi, Ingrid!

You've been wondering the same thing I've been wondering. I've been googling "crystal ice lettuce" "Emerald Crystal lettuce" and variations thereof for the last hour. Mainly, I've searched images because I want to see other pictures of the green. I've seen it mentioned a few places as Emerald Crystal Ice Lettuce or Emerald Crystal Lettuce but I'll be darned if I can find a picture of it.

I saw the making of this plate very briefly and it mainly consisted of watching them dot the leaves with the meyer lemon. It does look like there is a dressing on it but I hate that don't know more about it (the lettuce variety)! If you find anything, will you let me know? I will do likewise! :)
