Oddly enough, if you grew up downstate, this is referred to as a "cheese toastie". This is the case in Decatur at least...not sure how far it spreads.

I for one, have always referred to it as a grilled cheese.

A ton of American cheese on great, soft, thick store bought wheat bread. Brownberry or equivalent. Buttered and fried to a delicious medium brown where the cheese starts to get melty and come out of the sides. A side of ketchup for dippin'. A glass of root beer for drinkin'. Barq's is good.

My favorite is the Autumn Grill at Jenapea's in Woodstock: Baby swiss, Vermont Cheddar, apple butter and honey mustard on whole grain bread. It's thin and gooey and I could eat it every day.

Grilled cheese is a delicious treat
I eat mine on hearty wheat

With Cheddar Jack and Turkey.
Just to make it extra quirky,

I add Tapitio hot sauce
After eating, I never forget to floss!

A nice sourdough with gruyere is tops on my list. Bacon is optional and delicious.
