Revolution Brewing Brings Cibak Home

There's something of a brewing renaissance happening within the city limits these days. Metropolitan is up and running. Half Acre is also brewing while still in construction mode. Revolution Brewing, owned by Handlebar owner Josh Deth, is set to join them this summer. Along with Goose Island, this marks the first time multiple breweries were operating within the city limits in at least a half-century.

Acting on a tip, we contacted Deth yesterday and confirmed that he's bringing in Jim Cibak as Revolution's head brewer. Cibak's worked at Goose Island, Three Floyds and, most recently, Crown Brewing in Crown Point, Ind. Cibak's best known nationally for his award-winning stint at Firestone Walker Brewing, where he earned a reputation for making some damn fine barrel-aged brews.

Piece is only a brewpub, they're not actually brewing beer for mass consumption to be sold in retail outlets.

mike_thoms is right. piece is a brewpub, not a brewery for retail consumption.

I think they could do very well in the retail market with some of their offerings though

Crown Brewery had some amazing beers the few times I stopped by. I always fear what will happen to breweries when a brewmaster leaves, but it's more common than I realize, I suppose.

Deth's being optimistic for summer. I'm planning on visiting Rev Brew in the coming weeks to see the progress of construction, so I can see first hand where they stand.

Actually, we're hoping to get the brewery working at the end of the summer and to open up the restaurant more towards fall. Lots of rehab work to finish and red tape to cut through in this great city. Thanks for all the kind words.

Nice job on featuring hometown breweries. Do you know of any foreign brewers that have taken up residence in the area that feature old world styles and techniques? Most of the smaller places seem to be blazing their own trails.
