Chef Shuffle - New Pastry Chef at Cafe des Architectes
Meg Galus, formerly pastry chef at Tru, has taken the helm at Cafe des Architectes. She will also be taking over all the pastry duties of the Sofitel Chicago Water Tower, which houses the Cafe. This is quite the coup for Cafe des Architectes, as Galus was widely acclaimed during her time at Tru. Working under Executive Pastry Chef Gale Gand, she helped make the pastry offerings at Tru some of the best in Chicago, and was featured on Food Network's "Best Thing We Ever Ate" and has represented Tru on WGN TV's Lunchbreak - check it out for a recipe and video.
NBC broke the story of the move back in June, but the official announcement just came in yesterday. Galus will (no surprise) include many local and seasonal ingredients in her dessert offerings, and her style should fit right in with the Cafe's modern French offerings. We're going to run right over to try the Tahitian Vanilla Chiboust (say that three times fast) with plums and a cassis-hibiscus gelee.
Galus begun her culinary career from a young age, creating a pretend 'restaurant' complete with menus for her parents. If only all of us who played kitchen became this good! She holds a culinary degree from the French Pastry School and has also worked at Vanilla Patisserie in Chicago.
