One Great Dish: Goose Island Clybourn's English Beef Stew

The weather sure as hell isn't cooperating, but this is still the season for heartier comfort food that,a s the cliche goes, "sticks to your ribs." Beef stew is one of those staples and Goose Island Clybourn's English beef stew is one of our first home run dishes of the year.

Chef Andrew Hroza makes this from Slagel Farms beef, root vegetables, French fried leeks, all swimming in a beef demiglace and served with two tiny Stilton cheese biscuits. The biscuits — no bigger than a Susan B. Anthony one dollar coin — are worth the cost alone. The stew could easily feed two average-sized people or one Chicagoan. The beef is tender perfection and the potatoes, carrots and celery are perfect ingredients. Topped with the crispy leeks, this dish is one that will have you going back for more.
