One of the year's most anticipated restaurant openings is The Trenchermen, the project from Three Floyds'/former Blackbird chef Michael Sheerin and his brother and former Signature Room chef Pat in conjunction with the Nightwood/Bangers and Lace team of Matt Eisler and Kevin Heisner in the former Spring space in Wicker Park.

Cocktail fans have already gotten a taste of what mixologist Tona Palomino has in store for The Trenchermen's mixed drink program. Now it's the Sheerins' turn and they've chosen Valentine's Day to offer a glimpse of what to expect. They'll be hosting a Trenchermen pop-up kitchen at Logan Square Kitchen Feb. 12, 13 and 14. The pop-up will feature a five course tasting menu with beer, wine and cocktail pairings by Palomino will be a chance to preview dishes from the Sheerins in advance of The Trenchermen's scheduled March opening. A cash bar will also be available for cocktails before and after dinner. At $120 per person, this could wind up being one of the most sought-after dinners in Chicago. Scoop up tickets while you can.
