Prince Of Porc Crowned At Cochon 555 Chicago

For another year, five chefs, five pigs and five winemakers gathered at Cochon 555, a traveling culinary competition. Crowds filled the Four Seasons Hotel ballroom and tasted inspired pork creations from chefs Kevin Hickey (Allium), Cosmo Goss (Publican Quality Meats), Matthias Merges (Yusho), Ryan Poli (Tavernita) and Joshua Adams (June). Chef Robb Leavitt (of The Butcher & Larder) also showcased how to butcher a whole pig. This year's competition also included a cocktail competition, "Punch Kings" with six local bartenders mixing up delicious concoctions using Breckenridge Bourbon.

This year's Prince of Porc was chef Cosmo Goss of Publican Quality Meats, who will go on to compete at Grand Cochon at the Food & Wine Classic in Aspen in June. If you didn't get a chance to go, check out the gallery for all the porky goodness.
