Mindy Segal Is Opening A Bakery

2013_11_22_mindy.jpg This is certainly welcome news! Chef Mindy Segal, owner of Hot Chocolate and James Beard Award Winner (finally!) for Best Pastry Chef in America, is opening a bakery in Logan Square. Details are still sketchy, but here's what we do know.

The location of the bakery is on the 2300 block of North Milwaukee, and it's going to be massive—6,000 square feet. It's not going to have the fancy plated desserts that she's so famous for. Instead, it'll be a real bakery, with bread, cookies and other bakery goodies. A press release proclaims the bakery is French in concept, inspired by Segal's recent honeymoon in Paris, but will also capture the "feel-good Americana" craftsmanship for which Segal is known.

We've also heard there will be a dine-in component, but it will be more cafe style than restaurant style. We can only imagine that, with that much baking space, the bakery will also be producing pastries and breads for other restaurants - the better to spread the gospel of Mindy.

The very tentative opening date is Summer 2014.
