2014_04_ginfizz.png Spring is finally here, meaning it's time to switch out your rich, warming drinks for light, bright and refreshing cocktails. Enter the Gin & Fizz. It's deliciously smooth with a ticklish texture and you can easily adapt it to suit your personal tastes.

You'll need:

  • 1.5 ounces gin
  • 1 medium egg white
  • 2 1/2 teaspoons lemon juice
  • 2 1/2 teaspoons lime juice
  • 3 teaspoons simple syrup
  • 3 drops vanilla extract
  • Soda water
  • A cocktail mixer
  • Chilled glass

Add gin, egg white, juice, syrup and extract to the shaker. Shake vigorously, listening as the liquid becomes airy and thick. It will begin to sound like the shaker is full.

Let the contents relax before opening. Add ice to the shaker and vigorously shake again. Pour the soda water about a third of the way up a chilled glass and top with the cocktail. Garnish with a sprig of fresh mint, an orange twist or an edible blossom.
