Fans of encased meats have been walking around in a haze since Hot Doug’s closed with a flourish of long lines and media coverage last October. Since then, Doug Sohn’s public appearances have been scrutinized on level befitting folk heroes who walked into the sunset on their own terms.

And if that works, why mess with success? Sohn’s latest appearance involves giving fans a reminder of why he remains Chicago’s reigning sausage king on May 16 when Paulina Meat Market (3501 N. Lincoln Ave.) hosts Hot Doug’s Appreciation Day. The Roscoe Village butcher and Sohn worked together for years producing many of the sausages served at Hot Doug’s. Sohn won’t be cooking or taking orders but he will be at Paulina Meat Market taking another victory lap and greeting customers. If you’re one of the fanatics who went so far as to get a Hot Doug’s tattoo, Paulina Meat Market will serve a hot dog or sausage to you for free, per tradition.

Additionally, Sohn helped design the latest special pizza at Piece—a tomato and pepper jack pie with Hot Doug’s Atomic Bomb sausage. That hits the Wicker Park pizzeria’s menu March 1 and proceeds from sales of the pizza benefit food education program Pilot Light.
