Eataly's New Pop-ups Will Take You To Rome, Tuscany, Truffle Town

I love Eataly, and I've eaten just about everything on their menus while hopping from restaurant to restaurant. That's why their pop-up series continues to excite, as they transform one of their restaurants into a new concept month after month. Check out the upcoming deliciousness!

Right now, the current pop-up is Ristorante Toscano, a Tuscan-themed dining experience that includes dishes like whole grilled trout with baby artichokes and spring onions, pheasant with wild mushrooms and dandelion green and ricotta dumplings. You've only got a couple more weeks to try this menu, as the pop-up ends on April 30.

The rest of the year is pretty exciting, though the menus aren't available yet. After Tuscany, Eataly will take you to Rome for the month of May. Then they'll spend the summer in southern Italy before (be still my heart) bringing back Il Tartufo, their amazing (and surprisingly well-priced) truffle menu in the fall.
