We dropped by Revolution Brewing Saturday morning to check out the brewing of the collaborative beer between brewer Jim Cibak and Firestone Walker senior brewer Dustin Kral. When we made it into the brewhouse, Cibak and Kral were about an hour into their mash and were just beginning the process of transferring the wort to the whirpool tank to remove solids.
Revolution, Firestone Walker to Collaborate on a Beer
Chicagoist can confirm that Revolution Brewing and Firestone Walker Brewery will be working on a collaborative beer at Revolution's brewpub. Revolution Brewer Jim Cibak told us that he and Firestone Walker lead brewer Dustin Kral will be brewing a dry, West Coast-style IPA. "Midwestern IPAs tend to have a maltier palate," Cibak said. "This will be far removed from that." Cibak's relationship with Firestone Walker goes back years, when he brewed there under brewmaster Matt Brynildson. Both Cibak, Brynildson and Revolution owner Josh Deth brewed under Greg Hall at Goose Island, and Cibak still has friendly relations with Brynildson and Kral. This will be their first collaboration together. Brewing begins Saturday.
Firestone Walker's Chicago Debut Adds to Craft Beer Convo
Last night, Firestone Walker Brewing held a media and trade tasting of their Proprietor's Reserve line they're bringing to Chicago art Small Bar Division Street (and tonight's launch at Piece is still on). Firestone walker's arrival is easily the most anticipated craft beer launch in Chicago since Stone Week last year. But if Stone, which brought every beer they brew to town, was a nuclear option, Firestone Walker's limiting their beers in Chicago to the Proprietor's Reserve line is more akin to a surgical strike.
Firestone Walker Beers Come to Town
The richness of spoils that is Our Town's access to quality beers just increased big time. Firestone Walker is set fill shelves and tap handles throughout the city with its "Proprietor's Reserve" series. Firestone Walker brewer Matt Brynildson has some deep Chicago ties: he's a former head brewer at Goose Island; a founding partner at Piece Pizzeria and Brewery who was responsible for bringing in Jonathan Cutler as brewmaster there; and Revolution Brewing's Jim Cibak worked for him at Firestone Walker.
