Let's generalize, shall we? Bison, as a class, want you to eat them. If they didn't, then why would they be so delicious? Their meat is similar to beef, but a little bit sweeter, and in this writer's opinion, more tender. There's a misconception floating around that bison is gamey. Bison was gamey, perhaps, when hoards of bison roamed the great plains of America and they were foraging and galloping and eating all kinds of weird stuff that they found. Now, almost all the wild bison are gone and they're just raised on farms for human consumption. Which means they are being fed with grass and grains, which in turn means that bison does not taste gamey.

It’s a real shame that it is so difficult to make your own ribs in the city. We’re pretty sure your landlord is not crazy about the idea of a big barbecue smoker on your rickety wooden porch. Your condominium association might have an objection to you precariously balancing a huge smoker on your 25th story 3x3 cement porch. Nor do we think it good form to funnel woodsmoke into your neighbor’s bedroom window. These challenges aside, you can make what we call “high-rise style” barbecue ribs right at home. (Barbecue smoker purists, turn away!)

Grilled Pineapple: Mmmm, summer.
We love our grill and it's not just for meat anymore. We served up grilled pineapple with big scoops of vanilla ice cream to top off our last barbecue and it proved to be a winner. We also grilled some white peaches but found that the pineapple was the hands down favorite as the ripe peaches were just a little too soft.

Everyone around us is frantically grilling their way into summer, and, as usual, big chunks of meat seem to rule the day. In our search for alternatives to steaks and chicken breasts, we ran across an article that suggested grilling clams. After doing a little research, we found out that this wasn’t as far-fetched as it sounds and decided to try it out. After a couple of attempts, we can whole-heartedly say that clam-grilling is both tasty and entertaining – but the recipe needed some tweaking to fit our tastes. Next time you’re looking for something new, try it out!
