Mike Gebert took a road trip to Iowa recently to film some behind-the-scenes footage at La Quercia in Norwalk, IA. La Quercia owners Herb and Kathy Eckhouse make some of the best dry-cured artisan salumi available, particularly prosciutto and guanciale.
