In order to honor the spirit of (then-ending) National Vegan Month, we decided to go all-out: Raw Food. Raw foodists believe that important, life-sustaining enzymes present in our food are destroyed by cooking, and so food must be processed in alternative ways. The Raw Food movement has gotten a lot of play in the food press over the last five years, raving about freshness and health benefits . So, with an open mind and an inquiring palate, we headed to Karyn’s Raw.

We hope you've gotten a chance to read our follow-up interview with Stephanie Izard from Friday (Karl has a "Chicagoist Re-Grills" with Dale Levitski we're posting in a bit). Among the many items we asked of Izard was for a recipe for National Vegan Month.
Back in our days living on the North Side the former Jim's Grill on Irving Park was a Saturday ritual for us and scores of others trying remove the fuzz from the night before. Owner Dave Choi would hold court, offering not only tasty food but nutritional advice and testimonials to the benefits of a vegan diet. One such exchange between us involved Choi asking for us to take a couple slices from a steak, place it in a beaker and let it sit out in the open for a week. "The way it rots in that beaker? That's what it's doing inside you," Choi said. We did the experiment and came back a week later. Choi asked how it went. "You were right," we said, "but the rest of that steak was so tasty coming off the grill."
