Restaurant News: Patrick Fahy goes to Sofitel, Ipsento Cafe Back Open
- We reported last week that award-winning pastry chef Patrick Fahy had left Blackbird to find a job that would, according to Paul Kahan, "allow him to start a family." The Stew now tells us that Fahy has found a new home at the Sofitel, the job recently vacated by Nomi Kitchen pastry chef Meg Galus. Apparently, after fielding several job offers outside of the city, Fahy decided to stay. One more reason to check out the Sofitel.

In the daytime hours, the Cookie Bar wants to be known by its sexy alter ego, Dirty Betty. The retro mod 70s style Cookie Bar is opening shop in the morning to offer an array of fresh baked doughnuts. But don’t let the normally quick and dirty nature of this morning treat dupe you; these doughnut are uniquely modern and gourmet. Dirty Betty’s opened its doors today, with passing pedestrians peering in and quickly lining up.
First Look: Doughnut Vault
Homer Simpson may have said it best when he called the doughnut sacrilicious. The rightness, the wrongness. The guilt, the pleasure. It’s a plump, round dichotomy with sprinkles. If you couldn’t tell, we’ve been charmed ever since our visit to Brendan Sodikoff’s newly opened Doughnut Vault, the hole-in the-wall doughnut and coffee shop just around the corner from Sodikoff’s Gilt Bar. And we’re not exaggerating about the size; Doughnut Vault isn’t much more than a brief hallway with a business end. A residual bank vault lends the place its name and, presumably, the rackful of fresh doughnuts stored within a false sense of security. Touches like the chandelier over the counter, the mirrored and tiled walls, checkered floor, pale blue doors and trim, and antique gold cash register all suggest an affinity with Sodikoff’s other local haunt, the likewise Francophile Maude’s Liquor bar. A window may soon serve walk-throughs, but for now the cashier is keeping it closed on account of the brisk weather. (Ed. Note: How can you not love a place with a "1/2" in its address? It's like the Hogwarts Doughnut Shop!)

Eat This Today - Crispy Pig Ears at the Publican
We got a hot tip yesterday that Samantha Radov, the pastry chef of the Publican, was cooking up something special for dessert. She kindly sent us a photo of her new delight - crispy pig's ears with cinnamon sugar and bitter chocolate sauce, served with maple gelato. They have appeared on the menu sporadically before, but they aren't always in stock, so if you want to taste them, head on down tonight. A Gorgeous Space and Sumptuous Pastries at Floriole
We've been delinquent in visiting Floriole's new space, but during the summer we tend to visit Lincoln Park only on Saturdays for Green City Market. Since they have a booth at GCM, it seemed less important for us to visit the actual storefront to get our fix. Now that market season is winding down, and we needed a spot for a North Side lunch date, we stopped in to check things out.

Behind the Scenes - Pastry at NoMI
Last week, we were lucky enough to get a behind-the-scenes glimpse of pastry-making at NoMI, the beautiful temple of French cuisine in the Park Hyatt. Frederic Moreau, the talented pastry chef, invited us into his marble-clad station, tucked away into a small nook off the dining room, to watch him work his magic.

So, when we get a chance to go behind the scenes and watch a great pastry chef, we always jump at the chance. Last week, we got to watch Jove Hubbard, pastry chef at David Burke's Primehouse. We'd previously thought of Primehouse as a great place for steak (naturally) but after this visit we'll be stopping in for dessert.
Review - Brunch at Cafe Selmarie
We must have walked past Café Selmarie 100 times during trips to Lincoln Square. Without fail, we always looked in, said "oh, isn't that pretty. We must go to eat there sometime," and walked on by, intent on our business. Gosh, do we feel stupid now. We've missed out on years of tasty food!
