- We reported on the sad closing and auctioning off of the famous Pump Room and its furnishings a few months back. The Feast reported this morning that the famous space is coming back, united with a famous chef. Jean-Georges Vongeritchen, who used to own Vong's Thai Kitchen in Chicago, is helming a new brand of hotel and restaurant, "Public," at the Ambassador East. Not clear exactly what it will look like yet or what the name will be, but at least the iconic space has a tenant.

Rick Tramonto has a new cookbook coming out next week. Steak With Friends compiles 150 recipes for entertaining friends in the backyard or in the kitchen. As a charcuterie enthusiast, one recipe that caught our eye was a for salmon pastrami with cucumber dill salad. Michael Ruhlman and Brian Polcyn have a few salmon curing recipe in Charcuterie, including one for salmon pastrami, and a quick search on epicurious for gravlax turns up some interesting recipes. But we never tried it. So we took the Tramonto recipe, then smoked it later.

Rick Tramonto and Gale Gand are on the move, again. The Tru masterminds, flush with the overwhelming success of their multiple restaurant concepts in the Westin Chicago North Shore Hotel in Wheeling, now have plans for restaurants in an Intercontinental Hotel being built in Rosemont and a Hyatt in Schaumburg currently undergoing a makeover.
Restaurant Show Tackles Sustainability
The National Restaurant Association trade show (we'll just call them the "good NRA") is still in full swing through tomorrow at McCormick Place. We went this weekend, took in some of the exhibits, marveled still at the sheer enormity of McCormick Place, and got enough Cholula samples to last us through the summer, or at least the next bloody mary, and our clothes reek of fried food.
