Chicago Chefs Show off at the Aspen Food and Wine Classic
Every year, the Food & Wine Classic in Aspen brings some of the country's best chefs, sommeliers, wine producers and hardcore culinarians (read: foodies) together for a weekend of both work and (mostly) play. With cooking seminars, wine tasting workshops, jam-packed tasting pavilions, lavish dinners and notorious after-parties, it's hard not to have a great and gluttonous time. With Move to Perennial, Virant Moves to the City
Last week, Our Town's food cognoscenti was stunned at the news that Ryan Poli was leaving Perennial to helm the kitchen at the soon-to-open Tavernita, where he hopes to pursue his passion for Spanish cuisine. This led to speculation as to whom would replace Poli at the Lincoln Park eatery, spurred in part by BOKA Restaurant Group owner Kevin Boehm's hints that the chef was a "celebrity."
Mangalitsas All Over
The Magalitsa pig, also known as the "curly haired hog," is a breed of pig that originated from Hungary and the Balkans known for its thick wooly coat. The meat from a Mangalitsa pig is also rich in fat and is reputed to have a flavor and texture similar to Wagyu beef. In gourmet circles Mangalitsas have eclipsed mulefoots as the new trendy pork.

With a huge hand clutching a glass of Austrian sparkling wine, David Cleverdon slowly gestured across the seemingly endless verdancy surrounding us like a compass searching for True North and said, "You're catching us at the beginning of a transition. Tomorrow, trucks will be coming to the farm and tearing up the land as we start laying the ground work for the future of Kinnikinnick Farm."

Travel & Leisure magazine announced their list of 50 Best New American Restaurants. Stop us if these four local entries to the list sound familiar; L2O, the Publican, Perennial and Urban Belly. L2O and the Publican also made the "Hot Tables" list at Conde Nast Traveler.
