Schools in suburban Ford Heights are going to begin sneaking soy onto school lunch menus this fall. Two items each week will substitute soy instead of meat. Examples of revised entrees students may be served include tacos or chili with soy crumbles in place of meat. However, students will not be told which dishes are meatless.
"The goal, researchers say, is to reduce fat and add nutrients into school meals as part of an ongoing effort to tackle childhood obesity." No mention of trying to improve the taste of cafeteria fare. Chicagoist is glad we no longer have to eat school cafeteria food!
