Grilled Pineapple: Mmmm, summer.

We love our grill and it's not just for meat anymore. We served up grilled pineapple with big scoops of vanilla ice cream to top off our last barbecue and it proved to be a winner. We also grilled some white peaches but found that the pineapple was the hands down favorite as the ripe peaches were just a little too soft.

The hot grill caramelizes the sugars in the pineapple, leaving sugar brown grill marks on the ripe fruit. Cut the top and bottom of your pineapple, slice off the outside with a sharp knife, and then cut it down the middle, top to bottom. Cut once more so you have quarter pieces and angle the knife to remove the core and leave a nice, flat side ready for grilling.

We brushed the grilled fruit with a mixture of honey, a little melted butter, cinnamon and a bit of hot water to thin the mixture. Once off the grill, cut into chunks and serve warm with vanilla ice cream. Mmmm, summer is off and running!
