French Pastry School Keeps Adding Ringers To Staff

The French Pastry School keeps adding world champion chefs to its staff. Two weeks ago it was En-Ming Hsu. Yesterday they announced that Dimitri Fayard of Vanille Patisserie will teach the French cakes and tarts portion of the school's 24-week "L'Art de la Pâtisserie" program beginning in January.
Fayard's resume includes opening the first Executive Pastry Chef at the Sofitel Chicago in 2002. A year later, he and wife Keli opened Vanille Patisserie at 2229 N. Clybourn. In August, Fayard and his team won the World Pastry Championships, held in Nashville. He's also been named one of the top 10 pastry chefs in the country by Pastry Art & Design and Chocolatier magazines.
