Chefs Team Up To Help Farm

By Chuck Sudo in Food on May 4, 2009 8:20PM

George Rasmussen of Swan Creek Farms provides quality artisan meats to restaurants throughout the city. More recently, Rasmussen has been a beneficiary of spent brewers grain from Goose Island's Clybourn brewpub. One of the early hits of John Manion's still-evolving menu overhaul there is the sliders made from Swan Creek's "beer-fed" pork. While making local deliveries a week ago Rasmussen lost his truck, trailer, generator and a lot of food intended to customers to a fire.

Manion and a host of other local chefs are coming to Rasmussen's aid. A fundraiser dinner has been scheduled for 7 p.m., May 20 at Goose Island Clybourn's Siebel Hall. The dinner is a farm-to-table, snout-to-tail affair featuring dishes made by Manion, Chris Pandel from the Bristol, Mado's Rob and Allison Leavitt, and the Hot Chocolate team of Mindy Segal and Mark Steuer. Proceeds from the $100 per-head dinner will go to Rasmussen. RSVP to (312) 915-0071.
