Simple Cooking - Beef Satay with Peanut Sauce

For the last two weeks, we've been trying to get in as much grilling as possible before the weather turns into a frozen mess. Unfortunately, there's only so many hot dogs and steaks we can eat before we start longing for something more interesting. This recipe is a great use of the grill, and works as either an appetizer for 4 or a dinner for 2. If you want more, just increase the amount of steak - the amount of marinade/sauce can work for much more meat.

If you don't have a grill, don't worry! This recipe works just as well on a grill-pan inside. If you feel like being traditional, you can thread the steak onto skewers prior to grilling, but we're just too lazy. If you don't use skewers, be sure to use a grill basket or some other means of stopping small pieces from falling into the fire.

1 lb flank steak
1 small yellow onion, chopped
1/3 cup ketchup
1/3 cup soy sauce
1/4 cup dark sesame oil
4 tbsp brown sugar
6 cloves garlic, chopped
1/2 jalepeno, chopped
Juice of 1 lime
1 tbps chili paste (Siracha)
3 tbsp minced ginger
1/2 cup smooth peanut butter

Cut the steak, against the grain, into thin strips. Combine all other ingredients except the peanut butter in a mixing bowl and whisk together. Add 1 cup of water. Pour the mixture into a zip-top plastic bag and add the meat. Let the meat marinate for at least 1 hour.

Prepare your grill or grill pan. Take the meat out of the marinade, reserving all the liquid, and put the meat on a plate. Put the marinade in a small saucepan, add the peanut butter, stir and simmer.

Cook the meat until done medium-rare, approximately 2 minutes per side. Serve the steak with the sauce on the side and garnish with lime wedges.
