Qu'est-ce que c'est? Let's Elope, Elote.

Have you fallen in love with elote yet? You will. It's a popular Mexican street food: grilled corn on the cob covered with a mixture of mayonnaise, cheese, spices/herbs (may include chili powder, cayenne, cilantro, etc.) and a healthy squeeze of lime. The result is a mouthful of awesome: sweetness from the corn, some tang from the lime, heat from the cayenne and all of it overlaid with a hint of smoke.

We're sad that summer is behind us now and with it, the peak of corn season. But we're keeping our eyes peeled for vendors still selling elote and restaurants that feature it.
