Underneath his public image as a barbeque taskmaster, Gary Wiviott's a tender soul who's earned the nickname "Gentle Bear." And Wiviott will remain a gentle bear so long as you stick to his five-lesson plan for perfect barbeque.

Wiviott will be at The Backyard Barbecue Store (1147 Greenleaf Ave., Wilmette, 847-251-2272) to teach a class on ribs starting at 1 p.m. Saturday. Wiviott will show you how to make perfect ribs using both a Weber Smokey Mountain and a Big Green Egg; he's been experimenting with the latter a lot these days. He'll also show you how to make his Wiviott Rub, Tangy 7-Pepper Barbecue Sauce and Lexington Red Slaw, which are recipes in his "Low & Slow" book.

Cost is $50.
