One Great Dish: Flying Pork "Wings" From Flo & Santos

One menu item that piqued this cat's curiosity at Flo & Santos that wasn't sampled during previous visits was the "flying pork 'wings.'" You see, here at the popular South Loop tavern pizzeria, pigs fly straight out of the kitchen and to your plate in the form of pork shanks that have been brined, braised and Frenched to allow you to hold them like a chicken wing.

The shanks are coated (not smothered) in your choice of barbecue, teriyaki or Buffalo sauces and are so tender they fall right off the bone. It's a surprisingly tasty and beautifully plated appetizer although an order of five, for $9.99, can fill you up sooner that you get a chance to order one of Flo & Santos' pizzas.
