Do This: Wild Arctic Char Dinner at Kith & Kin

2010_08_char_pesto.jpg Cambridge Bay wild arctic char is one of the most prized seafood species in the world. Commercial fishermen search for the fish during the brief window of opportunity where the fish leave the ice caps and head for the Canadian bay, before the bay freezes up and the fish retreat to the comfort of their lives underneath the Arctic ice caps. If you haven't had wild Arctic char, you're doing yourself a disservice.

Carl Galvan of Supreme Lobster and Seafood, who seems to be powered by an endless supply of caffeine and cigarettes, has set up two 7-course dinners featuring Cambridge Bay Wild Arctic Char. The first one, tomorrow night at Blackbird featuring that restaurant's Mike Sheerin, Avenue's Curtis Duffy, Topolobampo's Brian Enyart, free agent chef Phillip Foss, Sepia's Andrew Zimmerman and Cibo Matto's todd Stein, still has limited seating available (call Blackbird at 312-315-0708 to RSVP).

But we want to clue you in to the second dinner, next Wednesday, August 25 at Kith & Kin. Joining the K&K tag team of David Carrier and Andrew Brochu will be Perennial's Ryan Poli, Chris Pandel of the Bristol, Vie's Paul Virant, Longman & Eagle's Jared Wentworth and Paul Fehribach of Big Jones. The cost for each $125 dinner includes beer, wine or cocktail pairings for each course. This will be limited to 60 reservations. For the Kith & Kin dinner call 773-472-7070 to RSVP.
