Virant to Pen Canning Cookbook

2010_10_19_VIRANT.jpg When talk among local food nerds turns to chefs who can and preserve their own fruits and vegetables, Vie's Paul Virant is usually the first name to be dropped. And with good reason, as Virant's canning prowess is second to none.

Sun-Times food editor Janet Rausa Fuller has the news that Virant has signed a book deal with Ten Speed Press to write a cookbook on canning. The book is going to serve two purposes: how to make preserves and how to incorporate preserves in cooking.
