"One for the Road:" Grant Achatz, Time Traveler

The steady stream of videos Grant Achatz and his team have released charting the progress of the cocktail menu at the Aviary has done wonders in selling the sizzle for that proposed new lounge. But we haven't seen or heard much about the menu development of NEXT, the ticket only restaurant he's got in the works.

Until now.

Carly Fisher at The Feast was the first to show this. The video below shows Achatz and Chef de Cuisine Dave Beran working on a chicken dish for a "Paris 1906" menu, letting Time's Joel Stein into the kitchen to watch. As Achatz says at the end of the video, "what is old is new."
