Simple Cooking: Al Fresco Snacking with Toasted Cinnamon Nuts

Al fresco snacking recipes continue with this classic sweet treat. Surprise your friends and family with your tasty, toasty cinnamon crusted nuts. Added benefit: almonds are full of healthy vitamin E and omega-3 fatty acids. Additional added benefit: this recipe will make your whole house smell like Navy Pier, sans fast food and sweaty crowds.

Ingredients
4 cups of raw almonds
1 egg, whites only
½ cup of white sugar
1 tablespoon of cinnamon
1 tablespoon of cold water
1 tablespoon of butter
¼ teaspoon of salt
¼ teaspoon of nutmeg

Instructions
1. Preheat oven to 300 degrees.

2. In a large mixing bowl, whisk together the egg white and cold water. Mix until frothy, not foamy (see picture). Mix in almonds until each is lightly coated with the egg mixture.

3. In a separate bowl, mix together the dry ingredients of sugar, cinnamon, salt and nutmeg. Once thoroughly mixed, pour the dry ingredient mixture over the almonds, making sure to evenly distribute and coat the almonds.

4. In a medium sized baking sheet, grease the bottom and sides with butter. Pour the almond mixture onto the baking sheet spreading evenly on the baking sheet.

5. Place baking sheet of almonds in the oven for approximately 1 hour, stirring about every 15 minutes, until the mixture is golden brown and toasted.
