Moonshine's Brewing Company Has New Head Brewer, Summer Craft Beer Lineup

2011_7_Moonshine_IPA.jpgThe on-site brewery at Moonshine restaurant has tapped JD McCormick to take over operations following the departure of former head brewer Bob Kittrell. McCormick has been working under Kittrell at Moonshine and found recent success with White Lightning, a hoppy original creation that became Moonshine's fastest-selling house beer.

An alum of the Siebel Institute brewing academy, McCormick has developed a personal approach to brewing that draws on a wide range of yeast strains and eschews traditional beer styles. His newly announced summer craft brew menu includes Prince Albert, a strong, Belgian Style Grand Cru; Righteous Path, a bold Pale Ale; Able Danger, a bold, hoppy IPA; and Moonlight, a light, Golden Ale. White Lightning, McCormick's popular Belgian White Ale, will return to the taps, as well. Besides serving up mason-jarfuls at the bar and restaurant, Moonshine offers refillable 64-ounce growlers of its beers for customers to take home.

Moonshine chef Matt Wilde has been working on dishes that meld well with McCormick's offerings, including items for the new brunch menu that even incorporate ingredients from the brewery. Sugar extract from the brewing process is used to make a topping for Wilde's Malted Waffles, which come garnished with crushed malted milk balls. At dinner, Wilde recommends pairing his Cast Iron Shrimp Ceviche with the brewery's Able Danger IPA.
