Pumpkin Cupcakes: The Easiest Two-Ingredient Fall Dessert

You read right, just two ingredients are needed for this simple fall dessert recipe. Two ingredients and minimal baking time; this recipe is tailored for the not-so-baking savvy. For a quick and healthy fall dessert, follow the recipe below for a moist, rich cupcake full of pumpkin flavor.

2 Ingredient Pumpkin Cupcakes (makes 12 cupcakes)
1 can of pumpkin
1 box of yellow cake mix (any will do)

Instructions
Preheat the oven to 350 degrees.

Mix together the yellow cake mix and the can of pumpkin and mix well. Fill the cupcake wrappers about ¾ of the way to the top. These cupcakes will rise slightly, so pour filling into the wrappers accordingly. Place the cupcake pan in the middle rack of the oven and bake for 20-25 minutes.

Feeling fancy? Sprinkled the baked pumpkin cupcakes with powdered sugar

Feeling fancier? Top each finished cupcake with cream cheese frosting.

Feeling even fancier? Before baking, roll the mixture into one inch balls and bake. Once the balls have finished baking, let them cool then dip and coat in melted chocolate. Cool, then enjoy!
