Do This: Fall Harvest Cider Dinner at C-House with Greg Hall
By Anthony Todd in Food on Nov 1, 2011 6:40PM
Do you love well-made cider? Cider doesn't often get the spotlight in fancy "event" dinners - they're usually dominated by winemakers or, more recently, by craft brewers. This Thursday at 6:30 p.m., C-House is putting cider front and center. Chef Nicole Pederson will be serving a 4-course meal paired with Domaine Dupont ciders. As a bonus, former Goose Island brewmaster Greg Hall will be in attendance to talk about his new Virtue Cider project.
The dinner is a pretty good deal. For $55 per person, diners will get four courses (featuring many local ingredients) with cider pairings. The menu includes:
- Pan Seared Sea Scallop with Bitter Greens, Creamy Celeriac Purée, and Poached Apple (paired with Cidre Bouché Brut de Normandie)
- Slagel Farm Egg Omelet with Braised Endive, Chanterelle and Lobster Mushrooms (paired with Cidre Triple)
- Broken Arrow Ranch Venison Tenderloin with Hay Roasted Parsnips and Hickory Nuts (paired with Cidre Dupont Reserve)
- Black Walnut and Brown Butter Sponge Cake with Klug Farm Apples, Mascarpone, and Gelato (paired with Hors d’Age Calvados)
