Ian's "Go to Sleep" Pizza Lives Up to Its Name

A few months back Ian's Pizza in Wrigleyville (3463 N. Clark St.) featured a pizza they called the "Go to Sleep" pizza. Created by current World Wrestling Entertainment champion and Chicago native CM Punk, the pizza consisted of smoked turkey leg meat from Paulina Meat Market, sliced potatoes, Swiss cheese and French fried onions on a creme fraiche base. At the time we said it was essentially a hulked-up tarte flambee.

Punk's pizza made a return engagement to Ian's menu, so I made my way to there Wednesday for a slice of the "GTS." (The pizza is named after Punk's finishing maneuver — a knee to the face after being dropped from a fireman's carry position.) It certainly lives up to its name. the "GTS" is excessively starchy and could have benefited from some acidity; green apples and cranberries immediately came to mind. Hot sauce also works in a pinch and we liberally applied our emergency stash to the slice.

The texture of the "GTS" was pleasant, with a crispiness to the crust we look for in any good tarte flambee. Overall, this is a pizza that will knock you out. It's available at Ian's through tomorrow.
