Paul McGee
Grub Street Chicago was the first to break the news, which came via an email sent out by The Whislter. Eater Chicago theorizes that the McGee may be working on the Melman boys country and western project. Chicagoist reached out to RJ Melman for comment. Melman would only say that he and his brother are excited to work with him. "He is super talented, and we think we have a very exciting concept that we are going to do together." The Whistler, likewise, was sad but excited to see McGee leave.
So are we, to be frank. McGee's cocktails—like the one he made for the Chicagoist 5th anniversary—were one of the main reasons we loved visiting The Whistler. Grub Street Chicago's Mike Gebert said it will be interesting to see if they can maintain their high level of mixology. For what it's worth, the email The Whistler sent out indicates they're up for the challenge.
