Chris Pandel Shows Off Handmade Pastas At Balena

We're getting excited for Balena. As if the involvement of Chris Pandel, Debbi Peek and Amanda Rockman of The Bristol (in collaboration with Boka Group) wasn't enough to get our attention, now videos of the food and the drink are trickling out and they look amazing. Grubstreet reported last week about the handmade pasta selections at Balena, but last night we got a new video, focusing particularly on Tajarin, an all-egg yolk pasta (that looks to be our next favorite indulgence) and Chitarra, a square noodle paired with heavier sauces.

Tajarin is made by pouring pure egg yolks into a mound of flour - and watching Pandel make it is enough to make us long for lunchtime right this second.

No opening date has yet been announced for Balena, though based on tweets and hints from the owners and chefs, the space is coming together and the menu is mostly ready to go.
