Publican Quality Meats Set to Open on Feb. 6

2011_1_31PublicanQM.jpg We reported earlier this month that Publican Quality Meats, the new butcher/gourmet shop from Paul Kahan and Co., was about ready to open - but we had no date. Well, it looks like Feb. 6 is the day, at least for some of the store.

Eater Chicago reported that the bread is being baked and the retail side of the store is being stocked with olive oils, milk, eggs and chutney. That stuff will be ready on Feb. 6. Unfortunately, the meat won't be ready for another week after that. We're probably not going to head in until we can buy some pate, but it's nice to know that there's a new place for us to get our fancy bread fix after Pamela Fitzpatrick left Fox and Obel.

A quick "preview" video below. We use quotes because the only things this video tells you are: 1) This shop will involve... wait for it...meat. 2) Paul Kahan (or his designer) have great taste in 1920s music. It's worth watching just for that.
