Nellcote's Most Unique Feature: The Flour Mill

When we visited Nellcote during construction, the flour mill hadn't been installed yet. Jared Van Camp and his team are going to be milling their own flour for pizza, pasta and bread—and possibly for retail sale. (We hope.) Grub Street Chicago got a first look at the mill and posted a great video about its operation.

Van Camp told us that he and his team hadn't actually been taught how to use said flour mill: they had bought a ton of textbooks from the University of Kansas and are going to figure it out on the fly. Well, they're trying. The flour mill, from North Carolina, looked to GS Chi's Mike Gebert like "it was made by guys whose previous experience was in the construction of backwoods stills."

While we're sure there will be some hiccups, it's awesome to see Van Camp pushing the envelope of what can be produced locally.
