Video: Watch Nella Grassano Make A Margherita Pizza

I wrote Thursday about the opening of Pizzeria da Nella Cucina Napoletana, the new restaurant from third-generation Napoli pizzaiola Nella Grassano. (And you should hie yourselves there as quick as you can, if my dinner there Friday night is an indication.)

Here's a bonus from that story that didn't run, because it took forever to upload. Here's video of Grassano rolling out the dough to make one of her signature margherita pizzas. This is the one in the story where the dough didn't rise, but I would bet a pizza by Nella Grassano that doesn't meet her standards is still better than 90 percent of the pizzas made in Chicago. Pay special attention to how she forms a perfect disc with her hands; it's a no-nonsense technique hopefully leaves you as captivated as I.
