Seger, Graham Team Up For "Pop-Up Gastropub" At LUSH West Town This Weekend

2012_7_20_seger.jpg With his focus on fresh ingredients and meticulous recipe development, Adam Seger is one of the original gangstas of Chicago’s cocktail renaissance. Seger’s approach to mixology is more akin to being a chef than a bartender, which makes sense, since he started out as a chef and has a resume that includes stops at French Laundry, Per Se, and general manager of TRU.

It was at TRU that Seger first met Tim Graham, who went on to become executive chef there before leaving to later serve as executive chef at Paris Club. Graham’s work at TRU had the enviable task of following Rick Tramonto. In many ways his cooking surpassed Tramonto’s work.

Seger and Graham are teaming up for what is being called a “pop-up gastropub” July 21-22 at LUSH Wine & Spirits West Town location (1412 W. Chicago Ave.). From 6-10 p.m. both nights, guests can sample an a la carte cocktail and food menu at $9 each, or a seven-course tasting menu for $49.
