Chef Erling Wu Bower.
As much as we care about the health, welfare and happiness of former avec Chef Koren Grieveson (really!), the first thought that entered our minds when we heard that she'd left her post after so many years was: what about the chorizo-stuffed dates? And the taleggio truffle flatbread? And everything else we've loved there for years? Foodies, you can start breathing again; it's all going to be ok.

We received word yesterday that a new Chef de Cuisine had been appointed at avec. Erling Wu Bower worked under Grievson, and was most recently sous chef at The Publican. Wu Bower, like Grieveson, is another long-time Paul Kahan employee and obviously knows his stuff. While we look forward to seeing the unique touches that Wu Bower puts on the menu, a representative for Kahan and his One Off Hospitality Group confirmed that "beloved signature dishes" like the dates and the flatbread will remain on the menu for the indefinite future.

Thank goodness. And if you don't understand why we care about these dishes, get yourself to avec right now. Seriously.

Avec is located at 615 W. Randolph St.
