In all seriousness, it's a great slideshow by photographer Huge Galdones. The process does actually begin with a whole pig's head (if you're squeamish, skip the first few pictures) and after the hair is singed off, the meat is removed from the bones, seasoned with herbs, rolled into a porchetta-style tube and then braised. After braising, it gets sliced and roasted in their wood-fired oven.
